Description

Arley Vargas' pink bourbon is back and tasting better than ever. On the nose the coffee is sweet with aromas of brown sugar and subtle fruited notes. In the cup we're tasting juicy flavors of fresh watermelon and pink candy reminiscent of starburst. We recommend brewing this with some sort of paper filter (drip machine/pour over/Aeropress) but don't let us stop you from pulling some espresso shots. If you do go the espresso route, we recommend longer brew ratios (1:3+) and shorter shot times (grind coarser) to get the most out of this coffee.

From the roaster:

This coffee is a celebration of the hard work and skill of the farmer Arley Vargas and their team at La Piragua. The work and attention to detail required to produce coffee like this is hard to put into words but take one sip you'll realize you've found something special. I hope you enjoy this coffee as much as I do! - Corbin

Farm notes

Arley is part of the family business, working at La Piragua along with his
father Alexander Vargas. He inherited Alexander’s passion for high quality
coffees. The family prioritizes sustainable coffee production, including
incorporating regenerative practices on the farm. They use both washed
and natural processes to offer coffees with a variety of beautiful profiles.

The family uses Brix measurements to ensure they are picking coffee at
peak ripeness. Arley uses a double fermentation technique: first, an oxidized
fermentation for 72 hours, then an anerobic fermentation in barrels with
degassing valves for 98 hours. Drying is exclusively carried out in dryer
sheds over 15 to 20 days, ensuring consistent and uniform quality.
